PERUVIAN DISHES & COOKING DATES
I love cooking Peruvian Ceviche, my favourite dish and the "numero 1" typical dish from Lima, Peru. Peruvian Ceviche is prepared with fish marinated in citrus juice and spices. The acid in the citrus juice coagulates the proteins in the fish, effectively cooking it. The amazing flavour of the limes and the chillies is perfect combination.
Causa Limeña is a refreshing Peruvian dish from Lima which is made of layers of cooked, mashed potatoes filled with a variety of vegetables like avocado, onions, sweet corn , tuna or chicken. Causa is usually served cold garnished with black olives, hardboiled egg and lettuce. I look forward to meeting you on my Peruvian Coooking Classes with Spanish.
Lomo Saltado with its balance of Peruvian and Cantonese elements is the strongest example of Peruvian-Chinise fusion. After Ceviche this is one the most delicious and celebrated Peruvian stir fry dish. It combines marinated strips of chicken or beef, red onions, tomatoes and fries among other ingredients.
Peruvian Arroz con Pollo (rice with chicken) is the dish that almost every Peruvian knows how to prepare it. Peruvians are extremely fond of rice in general but Arroz con Pollo is the most popular rice dish. The main spice is cilantro with a secret ingredient: beer, which gives it a depth of flavour and makes it so delicious.
Arroz Chaufa is the Peruvian's version of Chinese fried rice. It is influenced by the influx of Chinese immigrants to Peru. Peru's fried rice version is a delicious fusion Peruvian-Chinese rice dish that spring onions, peppers, and soy sauce among many other ingredients.
